Manual email logging

I'm still hunting for the best fit for my needs. One thing I'm struggling with, I need to manually log emails, be ause my IT department won't allow integrations or installs by employees. As background, I will be the single user, not a company sponsored CRM. Nothing will change that, even ChatGPT keeps saying "just convince IT to allow it". It's NOT an option. So the challenge I'm having is in every test case the crm expects integration. There are notes fields but they can't accept an email thread (too long for the field). Basically I'm looking for a CRM that has an activity tab for each opportunity that can be a chronological timeline/history that I can paste or send the emails to, that will be searchable with ai. Like old-school Salesforce classic.

Help me choose, chatGPT is talking in circles

I need a CRM with some automations, visual dashboards and a very clean interface. I don't want to see fields I don't need. I do want to be able to customize the fields to my process, industry and company lingo. I will be the only user.

I'm a field sales rep with a medium-long sales cycle and complex multi stage projects. I need to be able to track contacts, project stages, post sales project activity, meetings, notes, emails, texts, calls, etc. I want a CRM that can pull contact info from an email instead of me manually entering everything.

I've been using ChatGPT to make stack recommendations but every one I test out feels too messy or cluttered or complicated. Now Chatty is the recommending the ones I've already tested that it failed at helping me set up. So it knows why I'm still looking and is still going backwards. Please help?

I've used Salesforce before. Not interested in trying to set it up on my own again.

I've tested Notion and Pipedrive. Hubspot has been recommended but seems to have the same challenges with being too cluttered for a my needs.

I want it to integrate with Apollo.

It also needs to be compliant with industry standards for privacy, no "I made this in my garage last night" (no offense to new entries into the market).

If you have a recommendation please include why you're recommending it.
